DAO deficiency, also known as histamine intolerance or food histaminosis, is a metabolic disorder characterized by a decreased ability to break down dietary histamine. It is due to a decrease in the activity of the enzyme diamine oxidase (DAO), which metabolizes histamine. This increases the likelihood of adverse effects such as migraines, gastrointestinal symptoms, dry or atopic skin, or chronic fatigue, among others. DAO deficiency is the main cause of food-related migraines.
