Lactose intolerance is a deficiency in the ability to digest lactose, a type of sugar found in milk and other dairy products. This intolerance is due to a deficiency of lactase, an enzyme produced in the small intestine that is essential in the process of converting lactose into the monosaccharides glucose and galactose for transport through the intestinal epithelium into the blood. This enzyme is synthesized at normal levels during the first two years of life (during lactation), but in some people, it begins to lose activity until it ceases between 5 and 10 years of age. This fact is determined by the presence of two genetic variants in our genome.
